Lavender Olive Oil Cookies
DetailsBefore starting, freeze the olive oil in a shallow bowl, then use a fork to break it up when you are ready to make the cookie dough.
Cream together Olive Oil, butter and sugar. Stir in egg, vanilla and cream fraiche. Add flour ½ cup at a time. Stir in lavender. Form dough in a roll about 1 1/2" across and wrap in wax paper. Chill for a few hours. Then cut slices 1/4 inch thick with a sharp knife. Place on baking sheet and inch apart. Bake in a preheated 350* oven for about 15 minutes, until the edges turn a little brown. Do not over cook.
*Note. These tasted really wonderful when completely cold. *Optional- Sprinkle on lavender scented powdered sugar or even drizzle on lavender colored sugar glaze.
