Gazpacho Ingredients
6 ripe tomatoes, peeled and chopped
1 cucumber, peled and chopped
1/4 small red onion finely chopped
1-2 teaspoon chopped cilantro
1/4 cup red wine vinegar
1/4 cup Cilantro Jalapeno Olive Oil
2 Tbsp lemon juice
1/2 tsp sea salt
1/2 tsp pepper
1/2 tsp cayenne pepper
1/2 cucumber, peeled and diced
1 avocado, diced
Basil Olive Oil to drizzle

Garlic Croutons
1 Baguette, cubed
Garlic Olive Oil
Garlic Garni spice OR sea salt, pepper, italian seasoning

Gazpacho 1. Combine first 10 ingredients in the blender until pureed. Place in non-metal stroage container and refrigerate overnight allowing flavors to blend. 2. When ready to serve, stir in diced cucumber and avocado. Top with Garlic Croutins and drizzle with Basil Oil

Croutons 1. Put the cubed baguette in a large Zip Lock bag, drizzle enought Galic Olive Oil to lightly coat, then sprinkle 1/2 to 1 tsp of spices on top. Close bag and shake. 2.Bake in a 400* oven until lightly brown.
